Bourbon Papayo, Colombia

Bourbon Papayo, Colombia

A sweet and expressive cup with notes of mango, strawberry and toffee. Natural anaerobic processed Bourbon Papayo, crafted with care at Inmaculada to showcase depth, sweetness and innovation.

###

###

This expressive microlot comes from Inmaculada, a family-owned farm in Colombia known for its commitment to sustainability, innovation and biodiversity. This coffee forms part of the Inmaculada Fellows Project, with fresh cherries sourced from an allied farm in Huila and transported overnight to Inmaculada in Pichindé, where all post-harvest processing is carefully managed to preserve exceptional quality.

The coffee is made from the highly sought-after Bourbon Papayo varietal, named for its distinctive papaya-shaped cherries. Each lot is handpicked and processed in small volumes to highlight the elegance and complexity of the varietal.

Processed using the natural anaerobic method, carefully selected cherries are fermented without oxygen before being slowly dried. This approach creates depth, sweetness and expressive flavour.

In the cup, expect a sweet and complex profile with notes of mango, strawberry and toffee, supported by tropical fruit character and a creamy, lactic mouthfeel.

We are the home of fresh coffee. When you order online, your coffee is roasted fresh to order, especially for you. Plus, it’s specialty grade and traded ethically through Union Direct Trade.
